Applesauce Muffins - Meant to be a cake but came with the suggestion of making into muffins. I took the advice and made muffins, and also added a streusel topping. I thought the topping was a bit too much, but my hungry guinea pigs said otherwise. I also made one small "cake" using a a heart-shaped spring -form pan I got this past Valentine's Day.
Low-Fat Chocolate Chip Cookies - I was skeptical of these, but they are half the normal butter and less sugar. I am going to try a different sugar ratio the next time, but these turned out delish.
Apple Pie - I made this is a bit of a mash-up between a basic apple pie recipe and my grandmother's recipe. It is not the prettiest thing I've ever made, but it was definitely tasty.
Apple Muffins with Struesel - These muffins had chunks of apple and then a buttery struesel topping. I had my doubts about using chopped apples, but they were amazing.
Pumpkin Muffins and first pie of the season - these were delicious. Pretty much straight pumpkin-y muffin goodness. The pie came out a little ugly, but that is why it was a trial run that didn't leave the house.
